You absolutely do. Prepare to spend a small fortune tracking them down.

Not true, many games can be used without a keyboard.

I concur with newman here.  It's very possible to run an X68 without a keyboard or mouse, you just need to avoid games that fail to autoboot (there aren't many, most fire straight up and use the joystick to select menu options, etc).  Some rare action games need a keyboard, like Flappy 2 which has a keystroke to restart the level (which you'll need to do a lot).  Some also require a keypress to start the game, like Flying Shark (IIRC).

A computer without a keyboard is like having a toaster and sliced bread to put in it, but no wall socket to hook it up D:

Did anyone bother with documenting the keyboard and mouse used in the X68000 hardware ?

Documenting how?  Pinouts?  Key layout?  Colour?  ;)

Maybe pinout, key layout and communication protocol ?

Perhaps some of the more skilled users on this forum could use such info to develop a PS/2 to X68000 adapter and could allow users of such rare systems keep their original keyboards stored while using a market standard replacement for daily usage. Or just for people who has no keyboard/mouse to begin with.
