Good news ! Mr.Hizmi revealed the missing piece of the puzzle, and the word is Zmusic2. After some searching around I found two humongous documents which look like doctor's dissertation papers.

Have you ever succeeded in composing your own melody on the X68000 ? I would love to give it a go without reading 600 pages of manual and learning MML by heart. ;)

as far as the zmusic2 document is concerned, it looks like it's just the concatenation of files from the already existing ZM_MAN.LZH (http://nfggames.com/x68000/Mirrors/x68pub/x68tools/SOUND/ZMUSIC/V2/ZM_MAN.LZH)
I haven't. I'm not really a musician. Just stuff that I wound up with :)

My best friend is studying composition at the new england conservatory, i wonder if he'd be interested in composing on x68k... I know he hates midi instruments though, haha.

I was looking for something like this to pass on to any interested composer back when I was working on a game project for the old X68000. Alas, I never found a guy with sufficient technical knowledge. Composers that know MML are of the rarest breed.
