Absolutely!

Is it easy to do? No. You would need an SMD rework station to perform this easily, although the tedious desoldering (of old CPU) and resoldering would work as well.

The part you would have to use would be a 68010 in a surface-mount package:

68010's are extremely hard to find, ESPECIALLY in surface-mounted form.

i found one in my old HP JetDirect box...  (well, not a 68010, but a 10MHz version of the 68000)

Surface-Mount 68000s are as common as a cheap hooker in vegas.
