You don't need to process the audio when doing a conversion. If you can pull the audio out seperately, then you're sorted.

What is the video quality like when using one of these? is there any quality loss at all?
since I have no easy access to RGB monitor can't tell you the difference... :P
Conversion between RGB and colour difference video is fairly straight forward and can be done with negligible picture degradation. See http://elm-chan.org/works/yuv2rgb/report.html (http://elm-chan.org/works/yuv2rgb/report.html) for info on how it's done (same idea in reverse)
I've not used the device mentioned previously but it looks up to the job (though the lack of any audio output is a bit worrying...but a little modification would soon fix that)
